Healthy Vegan Cookie Dough MACRO FRIENDLY
Okay so, I can't take full credit for this recipe. The other night I was really craving some cookie dough. You know, the big nestle globs right out of the fridge so soft and delicious. If you don't eat cookie dough raw... I don't know if we can be friends. I pulled up Pinterest and after being distracted by a few 10 minute pad thai and some beautiful hair styles, I did a quick search for vegan cookie dough. I decided to go for a recipe by Joyful Healthy Eats. Here is her original recipe:
½ cup peanut butter
2 teaspoons vanilla extract
2½ tablespoons maple syrup
½ teaspoon cinnamon
1 tablespoon ground chia seeds
⅓ cup 60% cacao chocolate chips or cocoa nibs
1 can of chickpeas, drained and rinsed
I decided I wanted something a little more macro friendly and with a higher protein content.
So, heres my recipe
1/2 cup PB2
2 teaspoons vanilla extract
1 tablespoon maple syrup
1 can of chickpeas
1/2 serving of Orgain Vanilla protein powder
1-2 dashes of water
chocolate chips as desired

Literally throw of all this in a food processor or blender and BAM. Healthy, delicious, macro friendly cookie dough!
I worked out the nutritional facts and per serving it is
There are 6 servings in each batch!
114 calories
17.3 grams of carbs
1.4g fat
7.5g protein
This seriously curbed my sweet tooth craving all while helping me stay on track with not only my current body goals but my fiber goals as well #chickpeas
If you try it, let me know how you like it!!! Be aware, its not exactly like cookie dough but, I really enjoy it.
